Refreshing lunch

People often see lunch as something unimportant. But to me it isn’t. I see it as the meal that keeps me going for the rest of the afternoon. It’s important to me to feel energetic, full without having the feeling that I want to take a nap.

Watermelon salad

True the years I have collected a ton of recipes; from pasta and quinoa salads to regular salads and sandwiches. But today I am sharing a summer inspired one: watermelon salad. You may think: what, watermelon as a lunch? Well, to be honest that was also my first reaction when I saw it passing by on Pinterest. But on a super hot day, when I was looking for some refreshment, I decided to try it out.

Watermelon salad

I combined a few different recipes and gave it my own ‘twist’. It turned super delicious, I even made it again the next day. It is really surprising how everything tastes so good together. Watermelon salad

Ingredients:

2 slices of watermelon (depends on your own flavour)

Feta (half of a regular size package)

A small handful of walnuts

Olive oil

Salt and pepper

Half a cucumber

One tomato

A quarter of a red onion

Lemon

Preparation:

1) Cut the cucumber, feta, tomato and watermelon in cubes. They don’t have to be the exact same size. Your watermelon cubes can be a bit bigger. Cut the red onion in really fine cubes, as it stays raw.

2) Put everything in a (salad) bowl and mix gently.

3) Now add the walnuts, lightly chopped, and squeeze in some lemon juice. Don’t forget to add some olive oil and pepper. Be gentle with salt, because feta is quite salt. Make sure to give it a taste and add seasoning until you are happy with it.
